Potato – King Edward

King Edward is a very versatile potato that has white flesh with an off white skin and big pink blushes around the growth points. It usually grows into a flattened oval that tends to have a slight point at one end. it has a fluffy fine grain that is great for most uses but excels when parboiled and roasted or just baked. It is an old variety developed soon after the potato famines in England and Ireland and is pretty resistant to many of the usual growing problems. It is a medium sized bush. It can be grown either as a field main crop type that can be left to develop into fairly good sized tubers up to about 10cm long or intensely grown in a small space where it self limits and grows smaller new potatoes. They are attractive and very tasty. The skin can be a little paper thin on smaller potatoes and will basically wipe off with a cloth so you need to be careful washing small ones if you want the skin to fully remain on.
